- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar (or coconut sugar)
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup water (or almond milk)
- 1/3 cup vegetable oil (or melted coconut oil)
- 1 tbsp apple cider vinegar (or lemon juice)
- 1 tsp vanilla extract

Instructions
Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans (or line with parchment paper).
Mix dry ingredients: In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
Mix wet ingredients: In a separate bowl, combine the water (or almond milk), vegetable oil, apple cider vinegar, and vanilla extract.
Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir until fully combined. The batter will be fairly thin, but that’s normal!
Bake: Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
